Brian's Chicken Tenders with Spicy Peanut Sauce

This is one of those recipes that no matter how much you make, it is never enough. Our family loves them, You can also back off the heat on the peanut sauce if you want to..This can be done on the grill, ( I grill all year round, even in the snow, I just have to shovel the deck off first!)  This can be done as a quickie meal/appetizer.

 

3 lbs Chicken Tenders, Or if you can't  find them, and /or boneless chicken breasts are on sale, make them yourself!

Wooden skewers  Soak in water first, so they will not  A ) burn or B) take the moisture away for the chicken

1/2 tsp Salt, ( a few pinches)

2 to 3 cloves of garlic chopped or 2 tsp garlic powder

1 tsp onion powder

2  tsp ground coriander

1tsp  cumin

Black Pepper

1/4 cup soy sauce

Mix all ingredients together, let chicken soak 1/2 hour or longer

Skewer chicken, and brush with some oil, Canola, or olive oil

Peanut Sauce

1/2 cup peanut butter ( can be more)

1/ 4 cup soy sauce

2 -3 tsp crushed red pepper 

1-2 tsp, cayenne pepper

1/4 cup honey

juice of one lime,

Heat all together, until peanut butter and other liquids  combine,  stir, pour into bowl.

grill chicken, until done,

Eat and enjoy!
